水温℃

車海老は水温で代謝が大きく変わる、変温動物です。
毎日の水温の動きを読むことが、養殖の出発点になります。 Kuruma prawns are cold-blooded — their metabolism shifts greatly with water temperature. Reading its daily movement is where our farming begins.

WHY IT MATTERS

水温は、その日の餌の量を決める

車海老は変温動物のため、体温が水温と同じになります。
水温が高ければ代謝が上がって餌をよく食べ、低ければ動きが鈍り食欲が落ちます。

適温帯の 25〜28℃ では旺盛に成長し、20℃ を下回ると食欲が落ち、15℃ 以下ではほとんど餌を取りません。

つまり水温は、その日に与える餌の量を決める、最初の基準そのものなのです。 Being cold-blooded, a prawn's body matches the water around it. Warmer water means a faster metabolism and a hearty appetite; cooler water slows them down. From 25–28°C they grow vigorously; below 20°C they eat less; below 15°C they hardly feed at all. Water temperature, then, is the very first standard by which we decide how much to feed each day.

SEASON

通津の池の一年

山口県岩国市通津は、瀬戸内海の穏やかな入り江に面した土地です。
夏は 28℃ 前後、冬は 10℃ 台まで下がります。

夏の高水温期は溶存酸素が下がりやすく、夜間も気が抜けません。
冬は食欲が落ちる代わりに、海老の身が締まる季節でもあります。 Tsudu sits against a calm cove of the Seto Inland Sea. Summer brings water near 28°C; winter drops it into the low teens. In hot summers, dissolved oxygen falls easily — even at night we cannot relax. Winter brings less appetite, but it is also the season when the flesh of the prawn firms up.

OUR PRACTICE

神田商店の向き合い方

水温は朝・昼・夕方の三回、必ず全ての池で計測します。
前日比 1℃ 以上の変動があれば、その日のうちに餌の量を見直します。
季節の変わり目、天気が大きく崩れる前後は、特に丁寧に。

百年、同じ池を見続けてきたからこそ、数字の奥にある「いつもと違う」を感じ取ることができます。 Water temperature is measured three times a day — morning, noon, evening — across every pond, without fail. Any shift of more than 1°C from the day before, and we reassess the feed that same day. We are especially careful at the turn of the seasons, and on either side of a major change in weather. Having watched the same ponds for a hundred years, we sense what is "not quite usual" behind the numbers.
